Chocolate will always be one of my guilty pleasures and these Paleo Almond Butter Truffles are sure to satisfy the craving! Their creamy coating and sweat and salty center make for a real treat for any celebration.
Ingredients:
Truffle Filling:
- 1 cup roasted creamy salted almond butter
- ½ cup almond flour
- 3 Tbs coconut oil (melted)
- 3 Tbs raw honey
- 1 tsp vanilla extract
Chocolate Shell
- ¼ cup Coconut oil
- ⅓ Cocoa powder
- ¼ cup raw honey
Directions:
- Add all truffle filling ingredients into a food processor and mix to combine
- Line a baking sheet with parchment paper
- Roll filling mixture into 1” balls and place on baking sheet
- Chill filling balls for about 20 minutes or until firm
Chocolate Shell:
- In a medium saucepan, heat coconut oil
- Stir in the cocoa powder and raw honey, mix to combine
- Either using slothed spoon or a toothpick, drop each ball into the coating
- Place back on baking sheet and chill at least 1 hour in the refrigerator
