Paleo Chocolate Chip Coconut MacNut Cookies

A staple holiday cookie in my house are White Chocolate Macadamia Nut Cookies.  I found a great recipe a few years ago and have just always included them on my Christmas baking list.  

These cookies are  sweet and salty, delivering the combination this classic cookie recreation needs!  The crunch of the macadamia nuts and the creaminess of the chocolate creates a flavor that truly has my name all over it!

Ingredients:

Chocolate Chips (Inspired by Living Well Mom)

  • ½ cup coconut oil
  • ⅔ cup cacao powder
  • 4 tbsp raw honey
  • ½ tbsp vanilla extract

Cookies

  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup coconut oil
  • ½ cup raw honey
  • ¼ cup tapioca flour
  • ¾ cup coconut flour
  • ⅓ cup unsweetened shredded coconut
  • ¾ tsp baking soda
  • ¼ tsp salt
  • ¾ chopped salted macadamia nuts
  • 1 cup chocolate chips

Directions:

Chocolate Chips

  • Line a baking sheet with parchment paper
  • In a medium saucepan melt the coconut oil
  • Once melted, add the cacao, honey and vanilla extract to the melted coconut oil
  • Allow to simmer slightly while whisking to remove lumps and avoiding it to burn
  • Remove from the heat and let sit for a little less than a minute to slightly thicken
  • Pour onto lined baking sheet
  • Smooth to about ¼” thick
  • Refrigerate at least two hours
  • Cut into chunks
  • Store in airtight container in the refrigerator

Cookies

  • Preheat oven to 350 degree and line a baking sheet with parchment paper
  • Using a hand mixer, combine eggs, coconut oil, honey and vanilla extract
  • In a small separate bowl, combine the coconut flour, tapioca flour, shredded coconut, baking soda and salt
  • In batches, add the dry ingredients to the wet ingredients and mix to combine
  • Stir in chopped nuts and chocolate chips
  • Using a tablespoon, spoon each cookie onto your lined baking sheet
  • Form the cookies how you want them
  • Bake for about 10-12 minutes, or until edges are lightly browned and center has started for firm slightly
  • Let sit on baking sheet for a minute before transforming to a cooling ra
