Honey Dijon Crispy Chicken

This recipe will also be a staple in my house. Picture this- after a long day, you find yourself crunching into a juicy piece of chicken, coated in a sweet and tangy honey dijon dressing! To me, that makes for a satisfying and delicious meal any night of the week!  

The trick is to  allow the chicken pieces to soak in an egg bath before breading and frying them  to create a crunch that will have you questioning, is this really paleo?  You better believe it is!

Ingredients:

Chicken:

  • 2 lbs boneless, skinless chicken tenders
  • 2 cups tapioca flour
  • 1 Tbs salt
  • 2 tsp garlic powder
  • 2 eggs
  • 1/2 cup avocado oil, divided

Honey Dijon Sauce:  (Recipe courtesy of Rubies and Radishes)

  • ½ cup paleo approved mayonnaise (homemade or store bought)
  • 2 Tbs dijon mustard
  • 2 Tbs raw honey

Directions:

Chicken:

  • Cut chicken into 1 inch pieces
  • In a small ziplock bag, add eggs and mix
  • In a large ziplock bag, combine tapioca flour, salt and garlic powder and mix well
  • Place chicken in the ziplock bag with the eggs and let sit about 10-15 minutes in the eggs.  Before placing chicken into the flour, be sure to let the excess egg run off
  • Place chicken into the ziplock bag with tapioca flour and coat evenly
  • Complete this process until all chicken has been battered
  • Heat enough avocado oil to coat the bottom of your pan over medium/high heat.  Make sure the oil is hot before placing in chicken pieces
  • One by one, add the pieces of the chicken to the pan.  Be sure not to overcrowd the pan.   Cook in batches if need be and add more avocado oil 
  • Fry the chicken until brown and crispy
  • Remove cooked chicken and drain on paper towel

Honey Dijon Sauce

  • Combine all ingredients and stir until smooth
  • In a bowl mix with chicken, coating evenly and serve
