Delicious taco filling doesn’t just have to be eaten inside of a crispy tortilla shell. It can be enjoyed in between lettuce wraps, over a steamy baked potato, or scooped up with a crispy sweet potato or plantain chips. My favorite way is to enjoy my spicy taco filling is to crisp up some sweet potatoes, add a heaping serving of creamy guacamole and pile on this delicious spicy taco ground beef filling. This recipe is also Whole30 compliant and makes for an easy weeknight dinner or breakfast served up with over-easy eggs (or whichever way you like them).
Ingredients:
- 2 bell peppers, diced
- 1 medium onion, diced
- 2 lbs ground beef
- 2 Tbsp avocado oil
- 1 tsp Cumin
- 1 ½ tsp Salt, divided
- ½ tsp garlic powder
- ½ tsp Cayenne pepper
- ½ tsp smoked paprika
- ½ tsp chipotle chili powder
- 6oz tomato paste
Directions:
- Heat avocado oil in a large saute pan
- Add peppers and onions and ½ tsp salt. Cook until soft and beginning to brown
- Add ground beef and break it up in the pan
- Add spices and additional teaspoon of salt. Mix to combine while also continuing to break up lumps
- Add tomato paste
- Cook until meat fully browned
- Serve over paleo chips, tortillas, or lettuce
