As part of my weekly meal prep I commonly bring salads for lunch. They are easy to prepare, transport well and can be made to be filling and satisfying with a variety of different mix-ins. One of my favorite dressing is this Creamy Honey Balsamic recipe, inspired by one of my favorite local restaurants salads! This sweet and tangy dressing is sure to jazz up any salad or can be served alongside veggies to dip in!
- ½ cup paleo mayonnaise
- 1 Tbsp dijon mustard
- ¼ cup balsamic vinegar
- 2 tbsp raw honey
- ½ tsp salt
- ½ cup olive oil
- In a small bowl whisk together all ingredients except olive oil
- While whisking slowly pour in the olive oil and emulsify.
- Store in airtight container in the refrigerator.
