This recipe is inspired by one of my favorite salads at a local restaurant. I love it because its flavorful, has a mix of textures and a dressing that adds so much richness with just the right amount of sweetness. I love a salad that is more then lettuce and protein. I find the more I jazz it up, the more satisfied I am. This salad does just that for me!
Ingredients:
Creamy Honey Vinaigrette:
- 2 tbsp red wine vinegar
- 2 ½ tbsp raw honey
- ½ clove garlic
- ¼ tsp salt
- ¼ cup +2 tbsp olive oil
Directions:
- In a blender add all ingredients except olive oil.
- Slowly pour in the olive oil while the machine is running to emulsify.
- Store in airtight container in the refrigerator.
Salad Assembly
- Iceberg lettuce
- Strawberries, quartered
- Blueberries
- Toasted pignoli nuts
- Shredded chicken breast
- Dressing
