Paleo Pumpkin Spice Truffle Bites

        Celebrate Halloween with my Paleo Pumpkin Spice Truffle Bites! These little babies are loaded with all things fall and are coated in my paleo approved homemade chocolate coating.  No tricks here, just treats!

Ingredients:

Filling:

  • 2 cups almond flour (Or leftover pulp from almond milk)
  • ½ cup raw honey
  • ½ cup almond butter
  • ½ cup pumpkin puree
  • 1 tsp vanilla extract
  • 4 tsp pumpkin pie spice
  • ½ tsp cinnamon
  • ¼ tsp salt

Chocolate Coating

  • ¼ cup coconut oil
  • ⅓ cocoa powder
  • ¼ cup raw honey
  • 1 tsp vanilla extract
  • ⅛ tsp salt

 

Filling Directions:

  • Add all truffle filling ingredients into a food processor and mix to combine.
  • Line a baking sheet with parchment paper
  • Use a teaspoon for form balls and place on baking sheet
  • Freeze filling for at least 1 hour.

 

Chocolate Shell:

  • In a medium saucepan, heat coconut oil over medium/low heat.
  • Once melted, stir in the cocoa powder, raw honey, vanilla extract and salt, mix to combine.
  • Let simmer for about 30 second continuously stirring.*
  • Turn off heat and let sit for another 30 second to thicken.
  • Using slotted spoon, drop each ball into the coating.
  • Place back on baking sheet and chill at least 1 hour in the freezer
  • Store in freezer.

Notes:

*If it simmers or sits too long it will become too thick to stick to the balls.  Although it does taste delicious!
